Roasted Broccoli with Miso Butter


Now, don’t get me wrong, broccoli is beautiful just lightly steamed, but if you want to take it to the next level, please just give it a roast; you’ll never go back.


This time of year, broccoli is an affordable vegetable option, but at times we do get a bit bored of just the basic vegetable. By giving it some dry, roasty heat, it tends to bring out this nutty flavor that you wouldn’t normally taste. Add to that the umami flavor of miso, and you’ll be coming back for more.


Roasted Broccoli with Miso Butter
Serves 6

Ingredients


  • Approx 500grms broccoli- cut into florets

  • 75grm unsalted room temperature butter-makes sure its unsalted

  • 2Tbsp miso paste- I prefer shiro or white miso

  • sesame seeds

  • Olive oil

  • Nanami Togarashi-Japanese 7 spice(optional)


Method


Preheat oven to 200’C and line a large oven tray.


Toss broccoli in a splash of oil (don’t over oil) and sprinkle with salt and pepper, lay out on the tray


Place in oven for 15mins, take out and give the vegetables a gentle toss and return to oven for another 5mins.

In a small bowl add in the butter and the miso. Mix together till well combined.


Once the broccoli has finished roasting, remove it from the oven and tip it into a large bowl. Add half the softened butter mix and give it a good toss to coat the vegetable.

Check the seasoning and adjust if needed.


Turn out onto your serving platter and spoon over the remaining butter mix, and if you are using the Nanami Togarashi, sprinkle over the top and finish with sesame seeds.


This is also great served cold as a salad with soba noodles and some salmon. But the butter can also work beautifully with roasted cauliflower or under the skin of a chicken breast.
