Easter eggs use to arrive in the supermarkets around the end of January and for me, that was the beginning of the Easter theme decorations.
Now they seem to start right after Christmas, which I sometimes think makes them seem a little less special, but it does give you a great excuse to make this recipe.

New York Style Cookies with mini Easter Eggs and Chewy Caramel
Makes 24 good-sized cookies
Ingredients
225g of butter at room temperature
3/4 cup brown sugar
1/2 cup caster sugar
2 eggs
2 1/2 cups flour
1/4 cup cornflour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups mini Easter eggs, chopped
1 packet Werther's Originals chewy caramels, chopped
Method
In a cake mixer, combine the butter and sugars, and beat for 3-4 minutes until the mixture is light and fluffy.
Add the eggs one at a time, beating well after each addition.
Incorporate the flours and baking soda, beating until well combined.
Remove the bowl from the stand and gently mix in the eggs and caramels by hand.
On two lined baking trays, measure out 24 medium-sized balls, approximately the size of an egg.
When shaping the dough balls, avoid pressing too tightly to maintain a loose biscuit shape.
Refrigerate for 30 minutes to firm up.
Preheat the oven to 170°C and bake the trays for 12-14 minutes. The dough will still be slightly underdone, which is desirable for a bit of oozy texture.
Let them stand for 5 minutes to firm up before transferring to a cooling rack.
They are best enjoyed on the day they are made, but they freeze well and can be gently warmed before eating.
