Bread and Butter Pudding

Serves 6-8 people

Ingredients

  • 3 Stale croissants or 6 slices of stale bread

  • 1/2C frozen berries of your choice

  • !/2C Dark Choc

  • 3 Eggs

  • !/2C sugar

  • 1C milk

  • 1C cream

  • Splash of vanilla and a pinch of salt

Method

Preheat oven to 160'C and lightly grease a baking dish.

Lightly toast your bread of choice under the grill and then butter one side.

Cut into triangles and arrange in the dish over lapping. Scatter with the berries and chocolate.

In a large bowl beat together the eggs, dairy, vanilla, sugar and salt and pour over the bread.

Leave to sit for 15mins to allow the custard to absorb into the bread and to avoid the custard from just cooking in the base of the dish.

Sprinkle with a small amount of sugar and place into the oven for 35-40mins or till firm.

Allow to settle for 10mins before serving.

Serving Suggestions

  • Bread & Butter Pudding tastes best warm and fresh from the oven.

  • Serve with cream, custard, or a scoop of vanilla ice cream

  • add a sprinkle of chopped nuts or fresh berries on top.

  • Another nice touch is to spread your favourite berry jam over the base of the baking dish before layering in the bread

Tips for Success

  • Use day-old bread for better texture; fresh bread can get too soggy.

  • Don’t skimp on butter; it adds flavour and helps create a crisp top.

  • Let the pudding rest for a few minutes after baking to set properly.

  • Experiment with flavours like orange zest, chocolate chips, or different spices.
