My Delicious and Easy Berry & Ginger Cobbler Recipe: Perfect for All Seasons
This recipe was a big hit with my clients during the winter - the star of our menus.
And the best part is, I reckon it's perfect for all seasons - winter, autumn, and spring.

Let's get into My Delicious and Easy Berry & Ginger Cobbler Recipe: Perfect for All Seasons
Berry Ginger Cobbler
Serves 6-8
This can easily be changed to be gluten free.
Ingredients
500 grams frozen berries-your choice
85 gram crystallised ginger
1/2C sugar
1C flour- (3/4C gluten free flour+1/4C brown rice flour)
1tsp baking powder
3tsp ground ginger
100 gram butter-grated
1 egg
1/4C milk
Method
Preheat oven to 170’C.
Place berries, crystallised ginger, 2Tbsp sugar and 1C boiling water into a oven proof dish and stir together. Place onto a sided oven tray (this will save your oven from the possible mess if it overflows) and set aside.
In a bowl add all the ingredients except milk/egg and rub the butter into the dry ingredients till it resembles breadcrumbs. Mix in the milk/egg till well combined.
Spoon the mix over the berries not being too precious about the placement as it will meet up as it cooks.
Place into oven for 30-35mins or till the centre is cooked thru.
Serve hot from the oven with lashings of ice cream or whipped cream.
Now you don’t have to just use berries, I’ve made it with apricots, cooked cinnamon apples and love it with fresh peaches when they are in season. Don’t be afraid to use tinned fruit either it works for any type of fruit you have available.
